Marzetti Ultimate Blue Cheese Chicken


It sticks in my mind that recipes offered by companies trying to sell a product are almost always good. The company does not want to disappoint, they want to sell product.  In this case it's Marzetti Salad Dressings. Simple, elegant, easy, rich, full of nutrients etc.  The recipe was passed on by my sister. We tried it the other day. We gave it applause.   Catches your attention to think of sauteed apple & celery. An interestingly good combo. These are our results and the recipe.



Marzetti Ultimate Blue Cheese Chicken Recipe


Ingredients
3/4 cup Marzetti Ultimate Blue Cheese Dressing
4 boneless, skinless chicken breasts
salt and black pepper
1/2 teaspoon paprika
3 tablespoons olive oil, divided
1 Granny Smith apple, cored and sliced
1 cup sliced celery
1/3 cup sliced shallots or red onion
8 ounces clean baby spinach
1/4 cup toasted pine nuts

Directions
Season chicken with salt, pepper and paprika
Heat 2 tablespoons oil in a skillet over medium high heat and sear both sides of chicken
Continue to cook over medium heat until chicken is thoroughly cooked
Transfer to a plate and keep warm
In same skillet, heat remaining oil and saute apples, celery and shallots until tender
Gently heat Blue Cheese dressing in a saucepan; do not bring to a boil
Arrange spinach on plates, top with hot vegetables, apples and chicken
Spoon warm dressing over all and sprinkle with pine nuts
Serve

  1. This looks delicious and can't wait to try it. Mine however will not look quite like yours. Our tomatoes are not that red. Maybe a little food coloring? I am home again today. Wish you were here to enjoy the white blanket and the hot tub. Guess I"ll go organize some recipes (old).

    After looking at the recipe, I can only assume you meant 1/4 cup pine nuts or 14 cups.

  3. Must be a slip of my fingers. Sorry, One fourth cup is okay, I like half cup. Best answer.....to taste. I burned the first batch, no snow to extinguish but I did melt the trash bag. V

    Sounds like the chef should abstain from the "sauce", until the exact recipe is written.
